Ridge Gourd Skin Chutney
Rich in antioxidants and alkaloid compounds, which regulate metabolism and eliminate toxins from the body
Ingredients
Ridge Gourd Peel or Skin (Peerkangai Thol) roughly chopped – 1 cup Fresh grated coconut – 1 cup
Cilantro – 1/2 cup packed
Green Chilies – 4
Ginger – 1 inch peeled and grated
Tamarind paste – 1/2 tsp
Sea Salt – 1/2 teaspoon or to taste
Water -as needed to grind
Oil – 2 teaspoons
Mustard seeds – 1/2 teaspoon
Instructions
Heat oil in a pan and splutter mustard seeds.
Saute fresh grated coconut, cilantro, ridge gourd skin, green chilli , ginger for 2 mins.
Grind all ingredients along with tamarind to a paste in a blender using salt and water.
Serve with idli, dosa, or adai with some coconut oil
