Black rice has a low glycemic index, providing a more stable energy source and avoiding the spikes in blood sugar associated with other carbohydrate-rich foods.
Black Rice Dosa
High in antioxidants, including anthocyanin
Ingredients
Black Rice (forbidden rice) – 2 cups
Idli rice – 2 cups
Whole black gram – 1 cup (skin removed)
Fenugreek seeds – 1/2 tsp
Sea Salt – 1 tbsp
Water – as needed for grinding
Instructions
It is just like making any other dosa recipe – you soak the black rice, idli rice and black gram with fenugreek seeds added – separately for atleast 8 hours.
Now first grind the whole black gram to a fluffy consistency with adding about 3/4 cup water roughly.
Then grind the idli rice and black rice together to a coarse rava like texture adding less water.
Mix both using your hands with salt. Cover and let it sit in a warm place for 8 to 10 hours to ferment.
It will ferment and double in quantity. Just give a gentle mix and make dosa.
Method for Dosa:
Scoop a ladleful of batter in the center of a hot tawa and spread in the form of a circular shape.
Serve hot with any spicy chutney.
