The niacin in these millets helps to reduce cholesterol and magnesium helps to lower blood pressure and reduces the risk of heart attacks.
Pearl Millet (Kambu) Idli
Rich in protein, fibre, phosphorous, magnesium and iron
Ingredients
Pearl millet – 1 cup
Idli rice – 1.5 cup
Whole urad dal – 1/2 cup
Fenugreek seeds – 1 tsp
Sea Salt – 1 tbsp or to taste
Instructions
Soak pearl millet, idli rice, urad dal and fenugreek seeds for 6 hours and grind to smooth consistency.
Let it sit to ferment for 8 to 10 hours.
Method for Idli:
Grease the idli plates and pour the pearl millet batter.
Cook them in idli cooker for 15 minutes
Remove carefully with a spoon and serve hot with any spicy chutney.
