Coconut milk contains good concentration of lauric acid, a medium chain fatty acid (MCFA) which gets converted to monolaurin in the body, a compound with antiviral and antibacterial properties.
Coconut Milk Rice
Packed with vitamins, iron, selenium, sodium, calcium, magnesium and phosphorus
Ingredients
Basmati rice-2 cups
Coconut oil or Ghee– 2 tbsp
Green chillies-8
Cashew-10 – 15 halves
Masala- (cinnamon-1”, cloves-2, cardamom-2, bay leaf -1)
Tomato – 2 chopped
Garlic-6 cloves
Ginger – 1 inch grated
Onion-1 chopped
Salt- to taste
Coconut milk + water – 4 cup (2 cup organic coconut milk + 2 cup water)
2 cup mixed vegetables (green peas, cauliflower, mushrooms, carrots, green beans, etc)
Half a lemon and some chopped cilantro to garnish
Instructions
In a deep pan heat the oil and add the masala spices. When they turn color saute the onions.
Now fry chillies, ginger, garlic and when they brown, add the vegetables, tomatoes and basmati rice and fry for few mins.
Measure 4 cups (water + coconut milk combination) and add it to the rice.
When it starts boiling, add salt, squeeze some lemon juice and close with a lid for 5 mins in low heat.
Turn off the stove and keep it closed for another 10 mins.
Garnish with chopped cilantro.
