The niacin in these millets helps to reduce cholesterol and magnesium helps to lower blood pressure and reduces the risk of heart attacks.
Pearl Millet (Kambu) Upma
Rich in protein, fibre, phosphorous, magnesium and iron
Ingredients
Pearl millet rava (Kambu rava) – 1 cup
Water – 2.5 cups
Onion – 1/4 cup (sliced)
Green chili – 2 slit open
Ginger – 1 teaspoon (finely chopped)
Mixed vegetables (tomato, carrot, green peas, green beans) – 1/2 cup
Mustard seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Split black gram – 1/2 tsp
Curry leaves – 5 leaves
Cilantro leaves – 1 tbsp (chopped)
Turmeric powder – 1/4 tsp
Sea Salt – 1 tsp
Coconut or avocado oil – 2 tbsp
Instructions
Dry roast pearl millet rava for few minutes over very low flame. Do not brown them, just roast to heat it up and keep it aside.
Heat oil in a pan – Splutter mustard seeds, cumin seeds, split black gram and curry leaves.
Add chopped onion, green chilies , ginger and mixed vegetables. Saute them with turmeric powder and little salt.
Add 2.5 cups of water and bring it to a boil, add in roasted pearl millet rava and cook for 5 minutes and switch off the stove.
Once done, fluff with a fork, garnish with cilantro leaves. Serve hot with some spicy chutney!
