Noodles with Mint-Cilantro-Pumpkin Seed Sauce
Excellent source of fatty acids, potassium, magnesium, and calcium.
Ingredients
Cilantro leaves- 1/2 cup packed
Mint leaves – 1/2 cup packed
Pumpkin seeds – 1/3 cup
Olive oil – 1/4 cup
White wine vinegar – 1/2 tsp
Coconut aminos or soy sauce – 1/2 tsp
Raw garlic cloves, peeled with ends chopped off – 2
Sea salt – 1/4 tsp
Agave or honey – 1 tsp
Instructions
Blend the above ingredients in a blender to a paste and mix them with fresh steamed rice noodles
