Sweet Potato Almond Butter Smoothie
Good source of fiber, potassium, vitamins, and other essential nutrients
Ingredients
1 medium sweet potato steamed or baked, cut, and frozen (1 1/2 cups cubed)
1/2 cup frozen cauliflower rice
2 tablespoon almond butter (unsweetened and no salt added)
1/2 teaspoon vanilla extract
1/2 tablespoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups unsweetened vanilla almond milk (or more or less depending on smoothie thickness preference)
Instructions
Blend until smooth, about 1 minute. Top with toppings (nuts or blue berries) or drink as is.
