Coconut has anti-inflammatory properties and it is rich in omega-3 fatty acids.
Instant Pot Avial (South Indian Curry)
Good at boosting levels of HDL, known as “good” cholesterol
Ingredients
Coconut oil – 1 tbsp
Mustard seeds – 1 tsp
Curry leaves – handful
Vegetables – 4 cups cut lengthwise (2-inch-long pieces – carrots, green beans, pumpkin, taro root, potatoes, drumsticks (moringa), unripe plantain)
Grated coconut – 1/2 cup
Water – 2/3 cup
Green chili – 1 slit in half
Sea salt – 1 tsp
Cumin powder – 1/2 tsp
Turmeric – 1/4 tsp
Yogurt (regular or dairy-free coconut yogurt)
Instructions
Set the Instant Pot to ‘Sauté’ mode and adjust the setting to ’Normal’.
When the display reads ‘Hot’, add the coconut oil.
Once the oil is hot, add the mustard seeds and curry leaves.
When the mustard seeds begin to pop, add the remaining ingredients to the pot except for the yogurt.
Cover the Instant Pot and move the vent to the sealing position.
Pressure cook under high pressure for 4 minutes.
Once cooking is complete, allow the pressure to release on its own.
Open the lid and stir in the yogurt.
Serve immediately or at room temperature.
