Scientists have determined that sweet potatoes contain anti-inflammatory, anti-diabetic, and anticancer properties.
Mexican Bowl
Packed with vitamin B5, riboflavin, niacin, thiamin, and carotenoids
Ingredients
Onion- 1/2 diced
Sweet potatoe – 1 diced into ½ inch cubes -about 2 cups
Coconut oil or avocado oil – 3 tbsp
Generous pinch salt, pepper, chili powder
Cooked black beans – 1.5 cup (or one can drained), heated and seasoned with 1 teaspoon cumin, chili powder and a pinch of salt.
Green pepper- 1/2 diced
4 Eggs
Garnish: Avocado, cilantro, hot sauce and greek yogurt
Instructions
Toss onion and sweet potato with the oil, season with salt, pepper and chili powder and sear in a skillet over medium heat, stirring occasionally for 10-15 minutes
Heat the black beans, season with salt, chili pepper, and cumin
Prepare the eggs to your liking– either scrambled with green pepper, over easy, or sunny side up
Once the sweet potatoes are cooked, divide among 4 bowls. Divide the black beans. Top with the eggs, avocado slices and cilantro
Serve with your favorite hot sauce and a dollop of Greek yogurt
