Cilantro-Mint-Curry Leaves Chutney
Contains high levels of antioxidants and acts as a digestive aid
Ingredients
Fresh grated coconut – 1 cup
Cilantro – 1/2 cup packed
Mint – ½ cup packed
Curry leaves – 10 – 15 leaves
Green Chilies – 4
Ginger – 1 inch peeled and grated
Tamarind paste – 1/2 tsp
Sea Salt – 1/2 teaspoon or to taste
Water -as needed to grind
Oil – 2 teaspoons
Mustard seeds – 1/2 teaspoon
Instructions
Heat oil in a pan and splutter mustard seeds.
Saute fresh grated coconut, cilantro, mint, curry leaves, green chilli , ginger for 2 mins.
Grind all ingredients along with tamarind to a paste in a blender using salt and water.
Serve with idli, dosa, or adai with some coconut oil
